Eggplant “Pinakbet”
This is my entry to Yummy Sunday for this week. My friend cooked this while she was here visited our place. It was very delicious. I still have left over though she went back to her place. One of Filipino dishes that I love. It is eggplant with mixed vegetables. We add shrimp paste for this recipe. You could also add pork if you want. It is easy to cook too. You just have to mixed all the ingredients.
